Try this interesting variation of poha with barnyard millet and forget the regular version instantly!MILLET POHAIngredients1 cup banyard millet (samo)2 tbsps oil2-3 tbsps raw peanuts1 tsp mustard seeds½ tsp cumin seeds2 green chillies, chopped10-15 curry leaves2 medium onions, choppedSalt to taste¼ tsp turmeric powder½ tsp sugar1 lemon wedge2 tbsps chopped fresh corianderFresh coriander sprig for garnishMethod1. Heat a nonstick pan. Add banyard millet and roast on medium heat for 4-5 minutes.2. Add 2 cups water, cover and cook on high heat till water is absorbed.3. Lower the heat and cook for 5 minutes.4. Heat oil in a nonstick pan. Add peanuts and sauté till golden brown. Drain and set aside.5. Add mustard seeds and once they begin to splutter, add cumin seeds, green chillies, curry leaves and mix well.6. Add onions and mix well. Add salt, turmeric powder and mix well. Sauté on medium heat for 2-3 minutes.7. Add sugar and mix. Add cooked banyard millet and mix.8. Sprinkle 2 tbsps water, cover and cook for 2-3 minutes.9. Squeeze lemon, add the peanuts, coriander and mix well.10.
