Millet Palak Khichdi Family Food Tales Sanjeev Kapoor Khazana

"Healthy, on-pot light meal for th entire family. An exciting alternative to regular khichdi, filled with goodness of millets and spinach. Ek dish mein poori family maze se khaayegi.

MILLET PALAK KHICHDI

Ingredients

1 cup proso millet, soaked for 1-2 hours and drained
cup split skinless green gram, soaked for 1 hour and drained
1 cups shredded spinach
tsp turmeric powder
Salt to taste
1 tsp + 1 tbsp ghee + to serve
1 tsp cumin seeds
1 inch ginger, finely chopped
1 tbsps chopped garlic
1 large onion, finely chopped
1-2 green chillies, chopped
tsp garam masala powder
tsp lemon juice

Method

1. Heat a cooker, add the millet and split skinless green gram, add 4 cups water, turmeric powder salt, 1 tsp ghee, mix and cook under pressure for 1 whistle on medium heat. Switch the heat off and allow the pressure to reduce completely.
2. Heat remaining ghee in a non-stick pan. Add cumin seeds and let them change colour. Add ginger, garlic, and mix well. Cook for 1 minute.
3. Add onion and saut till golden. Add green chillies and mix well. Add spinach leaves and mix well. Cook for 1-2 minutes.
4. Add salt and mix.
5. Stir in the garam masala powder and cook for a few seconds. Add the cooked millet-gram mixture and mix till well combined.
6. Add the lemon juice, mix and switch the heat off.
7. Transfer the khichdi in a serving bowl, add ghee and serve hot with pickle and papads.
