Middle Eastern Cheese Parcels | Sanjeev Kapoor Khazana

A creamy feta cheese and bell pepper mixture stuffed in refined flour sheets and baked till crisp and golden brown.

MIDDLE EASTERN CHEESE PARCELS - (Serves - 4)

Ingredients

½ cup feta cheese
1½ cups refined flour
½ cup melted butter
¼ cup olive oil
½ teaspoon salt
1 medium red bell pepper, finely chopped
1 tablespoon chopped fresh parsley
Crushed black peppercorns to taste
Milk for brushing
White sesame seeds for sprinkling

Method

1. Preheat oven to 180° C.
2. Combine butter, olive oil and ¼ cup hot water in a bowl. Add salt and flour gradually, mix and knead till an oily dough forms. Cover with cling film and set aside for 10-15 minutes.
3. To prepare the filling, combine feta cheese, bell pepper, parsley and crushed peppercorns in another bowl and mix well.
4. Divide the dough into 2 equal portions, roll out to make ½ cm thick sheet and cut into squares.
5. Put some cheese mixture in the center of each square, fold into triangle and press the edges to seal. Place them on a baking tray, press the edges of each parcel with the back of the fork to create texture, brush some milk and sprinkle some sesame seeds on top.
6. Put the baking tray in preheated oven and bake for 20-25 minutes or till the crust is golden.
7. Serve hot.
