Michelin Star Restaurant Recipe Revealed! Heng Hwa Fried Rice Noodles Vermicelli Beehoon

Heng Hwa Fried Bee Hoon or Fried Vermicelli is a popular noodle dish at One Michelin starred PUTIEN restaurant. Don't be fooled by this plain looking dish. It is packed with a lot of flavours. Traditionally, Heng Hwa Fried Rice Noodles are made with pork bone stock, but we didn't have any on hand, so we used chicken bullion cube instead to save time. The end result tastes is just as good. Heng Hwa Bee Hoon have a finer, silkier and springier texture than other types of vermicelli. You might be able to find it at a Chinese supermarket near you. We had a hard time finding these, but we eventually found them in Singapore at Yue Hwa.

In case you didn't know, Heng Hwa is a minority Chinese dialect group, with roughly only 25,000 people in Singapore belonging to this group. Heng Hwa cuisine is from Putian, a coastal town in China's Fujian province. This is why seafood is widely included in this cuisine.

PUTIEN Heng Hwa Fried Rice Noodles (Vermicelli / Beehoon / Bihun)
Ingredients:
Serves 4 - 6 pax

90ml (3.04 fl oz) cooking oil
40g (1.41 oz) raw peanuts
5g (0.18 oz) dried seaweed
2 shallots (sliced thinly)
80g (2.82 oz) pork shoulder (sliced thinly)
20g (0.71 oz) sliced red onion
2 tofu puff / taupok (cut into strips)
5 dried Chinese Shitake mushrooms (rehydrated and cut into strips)
15g (0.53 oz) dried shrimp (rehydrated and chopped coarsely)
20g (0.71 oz) dried scallops (rehydrated and cut into chunks)
100g (3.53 oz) Chinese cabbage
1.2L (40.58 fl oz) water (can use pork bone stock or chicken stock)
1 chicken stock cube (omit if you're using pork bone stock or chicken stock)
2 tablespoons light soy sauce
0.5 teaspoon salt
A few dashes of white pepper
15 clams
250g (8.8 oz) fresh prawns
300g (10.58 oz) Heng Hwa bee hoon
