Mexican Grilled Corn On The Cob With Chipotle, Maple, Orange Sauce - 3 Ways To Cook It.

I will show you three ways to prepare and cook your corn and they are all easy. There really is no right or wrong way to barbecue corn on the cob.

I will be using a gas grill but you can use a charcoal grill too. Just try to achieve medium high heat.

Here is method number 1:

I show you how to grill the corn in the husks.
Peal back the husks to expose the silk. Keep the husks attached at the bottom, don't tear them completely off.

Pull off the silk. Then pull the husks back up over the corn. Place all the corn in a large pot to soak in cold water for 10 to 30 minutes.

When the BBQ is hot, drain the corn husks to remove excess water and lay the corn on the grill. Rotate the corn every 5 minutes for a total of 20 minutes. Remove from the grill and cool for 5 minutes.

Remove the charred husks and throw away. Add the chipotle sauce and enjoy. The only downside to this method is that it's a bit messy. The charred husks tend to get everywhere. The upside? You get a nice smokey flavor on the corn.

Method 2

Requires grilling the corn on the cop directly on the grill. Here you completely husk the corn and just lay it right on the hot bbq. Slather with the sauce and cook for about 8 to 10 minutes or until the kernels are golden brown. Turn the corn every 2 to 3 minutes.

The only downside is you have to watch this corn like a hawk so it doesn't burn or get dried out. The upside? You can see it easily to see how it is doing, cooks faster and you can baste with the sauce while grilling.

Method 3

Cooking corn on the cob in foil:

This method is great for entertaining. Clean and shuck the corn completely. Cut the corn in half. Place it on a small piece of foil and slather with chipotle sauce and wrap it with the foil. Cook on the barbeque for about 20 minutes.

The foil keep the corn warm for your guests. Less work for you so you can enjoy the party.

The only downside is maybe a little less smokey flavor in the corn. But if you have a great sauce, no worries.
