Delicious shallow fried tikkis with the flavour of fresh fenugreek leaves.METHI PANEER TIKKIIngredients½ medium bunch fresh fenugreek leaves (methi)200 grams cottage cheese (paneer)Salt to taste 2 medium potatoes, boiled, peeled and grated1 medium onion, finely chopped1-2 green chilies, finely chopped 1 teaspoon cumin seeds (jeera)1 teaspoon red chilli powder½ teaspoon garam masala powder½ teaspoon cumin powder¼ teaspoon turmeric powder1 tablespoon chopped fresh coriander leaves Oil for shallow-fryingTomato ketchup for servingMethod1. Put fenugreek leaves in a bowl. Add salt, mix and set aside for 15-20 minutes or till it leaves water.2. Combine potatoes, onion, green chillies, cumin seeds, cottage cheese, chilli powder, garam masala powder, cumin powder, turmeric powder and coriander leaves.3. Squeeze out excess water from fenugreek leaves, add to cottage cheese mixture alongwith some salt and mix well. 4. Divide the fenugreek leaves-cottage cheese mixture, shape into balls and slightly flatten between your palms.5. Heat some oil in a non-stick pan. Place the tikkis and shallow-fry from both sides till golden brown. Drain on absorbent paper. 6.
