A popular Gujarati recipe, methi and ripe bananas cooked in delightful flavours is a wonderful way of combining two popular ingredients as a main course dish. METHI KELA BHAJIIngredients 3 cups fresh fenugreek leaves (methi), finely chopped 3-4 ripe bananas, cut into thick roundels with the skin on 2-3 tablespoons oil 1 teaspoon mustard seeds Salt to taste½ tablespoon ginger-green chilli paste½ teaspoon turmeric powder 2 teaspoons coriander powder 2 teaspoons cumin powderChapattis or rotis to serve Method1. Heat the oil in a kadai. Add the mustard seeds. When they start to splutter, add the methi leaves and salt and mix well. Cook for 8-10 minutes. 2. Add ginger-green chilli paste. Stir-fry for a minute. Add turmeric powder, coriander and cumin powder. Mix well. Cook for 1-2 minutes. 3. Add banana roundels. Cook covered on low heat for two minutes.4. Serve hot with chappatis/rotis of your choice.
