Methi Aur Papad Ki Sabzi | Cooksmart | Sanjeev Kapoor Khazana

Methi Aur Papad ki Sabzi is a traditional Rajasthani dish which is extremely appetising and is pretty simple to make.

METHI AUR PAPAD KI SABZI

Ingredients

½ cup fenugreek seeds (methi dana), soaked overnight
7-8 moong dal papads
2 tbsps oil
¼ tsp asafoetida (hing)
½ tsp mustard seeds
1 inch cinnamon stick
2 dried red chillies
¼ tsp turmeric powder
¾ tsp red chilli powder
1 tsp coriander powder
Salt to taste
5-6 kokum petals
A little jaggery
1-2 ripe elaichi bananas, peeled

Method

1. Heat a non-stick pan. Drain and add fenugreek seeds and 2 cups water and let it cook.
2. Roast 4 papads on direct flame and set aside.
3. Heat oil in another non-stick pan, mustard seeds and cinnamon. Break the red chillies and add.
4. Drain the fenugreek seeds and add and mix well. Add turmeric powder, red chilli powder and coriander powder and mix well. Add 1½ cups water and salt and mix.
5. Break 3-4 unroasted papads and add. Add kokum petals and jaggery and mix. Break small pieces of bananas and add and mix well.
6. Transfer into a serving bowl, crush the roasted papads and put on top and serve hot.
