A special Maharashtrian recipe, Methamba is a sweet and spicy raw mango relish. It is a must have especially when mangoes are in season. METHAMBAIngredients3-4 medium raw mangoes2 tbsps oil1 tsp mustard seeds¼ tsp asafoetida (hing)¼ tsp fenugreek seeds (methi dana)½ tsp turmeric powder1 tsp red chilli powderSalt to taste¾ cup chopped jaggeryMethod1. Peel the raw mangoes and trim the top. Cut into wedges and discard the seed. Cut the wedges into 1 inch pieces. 2. Heat oil in a pan. Add mustard seeds and let them splutter. Add asafoetida and fenugreek seeds and mix well. Cook for 30 seconds. 3. Add the raw mango pieces and mix well. Add turmeric powder, red chilli powder and salt and mix well. Cover and cook on medium heat for 10-15 minutes or till soft and pulpy. 4. Add jaggery and mix well. Cook for 2-3 minutes. Switch the heat off and allow to cool completely.5. Transfer into a jar or a serving bowl.
