Melt-in-your-mouth Carnitas with Pork Fat Rice #short

Ingredients:
1 boneless pork shoulder (about 5 lb)
3 tbsp kosher salt or coarse sea salt
1 tbsp freshly ground black pepper
4 whole garlic cloves, peeled
cup neutral oil
Roast in the oven at 90C for 12 hours overnight
3 cups white rice
Ice water (for blanching)
6 medium tomatillos (blanch for 1 minute)
1 whole garlic clove, peeled
Juice of 1 lime
Kosher salt or coarse sea salt, to taste
Freshly ground black pepper, to taste
1 bunch cilantro
1 cup rendered pork fat (reserved from the carnitas, adjust to taste)
