Roasted Vermicelli simmered in milk, studded wit nuts. This dessert is a celebration in itself.

MEETHE SEVIYAN

Ingredients

1½ cups vermicelli (seviyan), roasted
⅓ cup sugar
½ cup milk
2 tablespoons ghee
5-6 cashewnuts, halved
7-8 almonds, sliced
10-12 pistachios, sliced
½ teaspoon green cardamom powder
A pinch saffron strands + for garnishing

Method

1. Heat ghee in a non-stick pan. Add cashewnuts, almonds and pistachios and sauté for 3-4 minutes.
2. Add vermicelli, stir and sauté for 5 minutes. Add milk, cardamom powder and a pinch saffron. Mix well, cover and cook for 5 minutes.
3. Add sugar and sprinkle some water, stir to mix, cover and cook for 3-4 minutes.
4. Garnish with saffron and serve warm.
