Meat Loaf Indian Style | Sanjeev Kapoor Khazana

Chicken mince mixed with eggs and some indian spices, poured into a loaf tin and baked.

MEAT LOAF INDIAN STYLE

Ingredients

½ cupchicken mince
1 tablespoon oil + for greasing
1 inch ginger, finely chopped
1 tablespoon chopped garlic
1 medium onion, finely chopped
1 medium carrot, finely chopped
1 teaspoon red chilli powder
1 teaspoongarammasala powder
3 eggs
1 tablespoon chopped fresh coriander leaves
Salt to taste
2 tablespoons breadcrumbs

Method

1. Preheat oven at 180ºC. Grease a loaf tin with some oil.
2. Heat 1 tablespoon oil in a non-stick pan. Add ginger, garlic, mix and sauté for a minute. Add onion, mix and sauté till golden. Add carrot, mix and cook for a minute.
3. Add chilli powder andgarammasala powder, mix and cook for a minute. Remove from heat and cool.
4. Take chicken mince in a bowl. Add eggs, chopped coriander, salt and onion mixture and mix. Add breadcrumbs and mix well.
5. Put the chicken mixture into the greased tin, tap and cover with an aluminium foil. Put the loaf on a baking tray, place the baking tray in preheated oven and bake for 20-25 minutes. Remove from oven and cool.
6. Demould, slice and serve.

Preparation Time: 15-20 minutes
Cooking Time: 30-35 minutes
