Do you love or hate matcha? Dane is OBSESSED and he is back this week to share a recipe that combines some of his favourite flavour combinations in one dreamy cupcake. MATCHA GANACHE:

400g Double Cream
170g Double Cream (Cold)
4 tsp Vanilla
6g Powdered Gelatine + 36g Cold Water
140g White Chocolate
4tbsp Demerara Sugar
2.5 tbsp Matcha Powder

RASPBERRY GOO:

400g Frozen Raspberries
125g Caster Sugar

WHITE CHOCOLATE CUPCAKES:

150g Butter
100g White Chocolate
120g Milk
1/4 tsp Vanilla
Pinch Salt
2 Large Eggs
120g Caster Sugar
180g Self Raising Flour

MATCHA CHOCOLATE CRUNCH DECORATION:

70g Malted Milk Biscuits, chopped up into small chunks and sieved
325g White Chocolate, tempered
1-2 tsp Matcha Powder, sieved
