Matcha Crepes With Mangoes | माचा क्रेप्स विथ मँगोज | Mango Recipes | Sanjeev Kapoor Khazana

A dessert that has a cooked element and is a tricolour riot on a plate. Matcha-flavoured crepes served with cubed mangoes and vanilla ice-cream.

MATCHA CREPES WITH MANGOES

Ingredients

1 tbsp matcha powder
1 ripe mango, peeled and cut into cubes
3 eggs
¼ cup castor sugar
A pinch of salt
1⅛ cups refined flour (maida)
1¾ cups milk
¼ cup melted butter + for greasing
Vanilla ice cream to serve
Fresh mint sprigs for garnish

Method

1. Break in the eggs in a bowl. Add castor sugar and salt and whisk well.
2. Sift refined flour, matcha powder, and whisk till well combined. Add milk little by little and continue to whisk till a smooth batter is formed. Add melted butter and mix well.
3. Heat a non-stick shallow pan. Grease with some melted butter, pour a ladleful of the batter and swirl the pan till a thin disc is formed. Cook for 1-2 minutes. Flip and cook the other side for 1 minute. Fold the crepe into quarters and arrange on a serving plate.
4. Add a portion of the mango, and scoops of vanilla ice cream on the side. Garnish with mint sprigs and serve.
