MASWADI

Ingredients

½ cup peanuts
¼ cup grated dried coconut
2 tablespoons sesame seeds
1½ tablespoons poppy seeds
1 tablespoon oil
¼ teaspoon asafoetida
¼ teaspoon turmeric powder
4-5 garlic cloves, finely chopped
1 medium onion, finely chopped
2 green chillies, chopped
Finely chopped fresh coriander leaves for garnishing
Scraped fresh coconut for garnishing
Covering
1 cup gram flour
2 tablespoons oil
½ teaspoon cumin seeds
A pinch asafoetida
¼ teaspoon turmeric powder
1 teaspoon red chilli powder
2 teaspoons garlic paste
Salt to taste

Method

1. Dry roast peanuts till lightly browned. Remove from heat and set aside.
2. Dry roast dried coconut till lightly browned. Remove from heat and transfer in the same bowl.
3. Dry roast sesame seeds till they start popping. Remove from heat and transfer in the same bowl.
4. Dry roast poppy seeds till they start popping. Remove from heat and transfer in the same bowl.
5. Heat oil in the same pan. Add asafoetida, turmeric powder and garlic paste, mix and sauté well.
6. Add onion, mix and sauté till golden.
7. Grind together the roasted ingredients, sautéed onion mixture and green chillies to a coarse mixture.
8. To make covering, heat oil in a non-stick pan. Add cumin seeds, asafoetida, turmeric powder and chilli powder, mix and sauté for 30 seconds.
9. Add garlic paste, mix well and sauté for a minute. Add some water, stir and bring to a boil.
10. Add salt and mix. Add gram flour, gradually, and keep mixing till well cooked. Switch off heat.
11. Spread a cling wrap on the worktop and spread the covering mixture on it. Cover with another cling wrap and roll out into a large sheet.
12. Discard the upper cling wrap and spread the ground mixture on top. Roll tightly alongwith the cling wrap. Set aside for some time.
13. Slice and serve garnished with chopped coriander and fresh coconut.
