A protein-rich preparation with masoor dal and onions flavoured with an authentic Maharashtrian masala.MASOOR DAL KANDAIngredients2 cups soaked and drained split red lentils (masoor dal)2 medium onions (kanda)2 tbsp oil1 tsp mustard seeds1 tsp cumin seedsA pinch of asafoetida (hing)2 green chillies, choppedA sprig of curry leavesSalt to taste1 tbsp ginger-garlic paste1 medium tomato, chopped½ tsp turmeric powder1 tsp red chilli powder½ tsp garam masala powder2 tsps kanda lasun masala2 tbsps chopped fresh corianderCoriander sprigRice bhakri for servingMethod1. Chop onions.2. Heat oil in a kadai. Add mustard seeds and once they start to splutter, add cumin seeds, asafoetida, green chillies, curry leaves, chopped onions, salt and sauté for 2 minutes.3. Add ginger –garlic paste and mix well. Sauté till onions turn golden brown.4. Add tomato and mix well. Cook for 3-4 minutes or till oil separates.5. Add turmeric powder, red chilli powder, garam masala powder and mix well.6. Add masoor dal and mix well. Add1½ cups water and mix. Cover with a lid and cook on low heat for 10-15 minutes.7. Add kanda lasun masala and mix. Add coriander and mix well.8.
