Mashed Sweet Potatoes Thai Style | Cooksmart | Sanjeev Kapoor Khazana

MASHED SWEET POTATOES
These mashed sweet potatoes are oh so tasty

Ingredients

2 large sweet potatoes, boiled
2 tbsps olive oil
15-20 shallots, peeled
3-4 garlic cloves
2 tbsps butter
Salt to taste
¼ tsp crushed black peppercorns
2 green chillies, chopped finely
Juice of 1 lemon
2 tbsps fresh cream
2 tbsps alfalfa sprouts

Method

1. Halve the sweet potatoes horizontally and peel them.
2. Heat olive oil in a non-stick pan. Chop shallots and garlic in a chopper and add to this pan and sauté. Add butter and mix and continue to sauté till soft.
3. Roughly chop sweet potatoes and add to the pan and mash roughly with a fork.
4. Add salt, crushed black peppercorns, green chillies and mix well. Add lemon juice and cream and mix well.
5. Transfer into a serving bowl and sprinkle a little pepper powder on top. Garnish with a few alfalfa sprouts and serve.
