A super healthy broken buckwheat dish that is cooked in coconut milk and spiced up with a tasty coconut tempering.

MASALAEDAR KUTTU

Ingredients

1½ cups broken buckwheat (kuttu)
2 cups coconut milk
Salt to taste
Tempering
2 tbsps coconut oil
1 tsp mustard seeds
2 tsps split skinless black gram (urad dal)
2 tsps Bengal gram (chana dal)
1 tsp cumin seeds
2-3 green chillies, chopped
10-12 curry leaves
1 medium onion, finely chopped
1 tsp red chilli powder
¼ cup scraped fresh coconut + for garnish
2 tbsps chopped fresh coriander leaves
¼ tsp garam masala powder
Fresh coriander sprig for garnish

Method

1. Dry roast buckwheat for 2-3 minutes or till golden brown, add coconut milk, 1 cup water, salt and mix well, cover and cook on high heat till the moisture evaporates, reduce the heat to low and cook further for 6-8 minutes. Take the pan off the heat.
2. To make the tempering, heat coconut oil in a small non-stick pan, add mustard seeds, split skinless black gram, Bengal gram, cumin seeds and sauté for 1-2 minutes.
3. Add green chillies, curry leaves, onion and sauté for 2-3 minutes. Add red chilli powder, mix and take the pan off the heat.
4. Pour this tempering into the cooked buckwheat mixture, coconut, coriander leaves and garam masala powder and mix.
