A super healthy broken buckwheat dish that is cooked in coconut milk and spiced up with a tasty coconut tempering.MASALAEDAR KUTTUIngredients1½ cups broken buckwheat (kuttu)2 cups coconut milkSalt to tasteTempering2 tbsps coconut oil1 tsp mustard seeds2 tsps split skinless black gram (urad dal)2 tsps Bengal gram (chana dal)1 tsp cumin seeds2-3 green chillies, chopped10-12 curry leaves1 medium onion, finely chopped1 tsp red chilli powder¼ cup scraped fresh coconut + for garnish2 tbsps chopped fresh coriander leaves¼ tsp garam masala powderFresh coriander sprig for garnishMethod1. Dry roast buckwheat for 2-3 minutes or till golden brown, add coconut milk, 1 cup water, salt and mix well, cover and cook on high heat till the moisture evaporates, reduce the heat to low and cook further for 6-8 minutes. Take the pan off the heat.2. To make the tempering, heat coconut oil in a small non-stick pan, add mustard seeds, split skinless black gram, Bengal gram, cumin seeds and sauté for 1-2 minutes. 3. Add green chillies, curry leaves, onion and sauté for 2-3 minutes. Add red chilli powder, mix and take the pan off the heat. 4. Pour this tempering into the cooked buckwheat mixture, coconut, coriander leaves and garam masala powder and mix.
