Masala Pulao

Ingredients:

Basmati rice/Raw rice - 2 cups

Butter - ¼ cup or 1 stick

Oil - 3 or 4 tbsp

Jeera - 1 tsp

Onions - 2 medium

Tomatoes - 4 or tomato puree - ½ cup

Ginger paste - ½ tsp

Chopped mixed vegetables of choice - 3 cups

Pav bhaji masala - 1 tsp

Kitchen King or garam masala - 1 tsp

Kashmiri chilli powder - to taste

Coriander leaves as reqd

Salt to taste

Method:

Wash rice and soak rice for at least ½ an hour 

Meanwhile chop onions and tomatoes

Now, heat some butter and oil

Splutter jeera

Add the chopped onion and stir fry till translucent

Now add ginger paste and saute

Add the chopped tomatoes or the puree

Stir fry everything well over medium flame

Now add all the chopped vegetables and stir fry well

Add the pav bhaji masala, kitchen King masala and the Kashmiri chilli powder and saute everything together

Add some coriander leaves and toss

Now add the drained rice and toss with more butter, lightly - ensure that rice doesn't break

Add 3 cups of water, if basmati rice

Add 4 cups of water, if ordinary rice

Allow everything to come to a boil

Add salt

Add more coriander leaves

Simmer the flame

Close tightly with a lid

Cook for 8 or 10 mins - in the middle of the process, open and lightly toss everything from the bottom and close again tightly with a lid

If pressure cooking, wait for one whistle over medium flame

Serve with curds and papads
