Masala Khichiya Papad | Sanjeev Kapoor Khazana

Deep fried khichiya papad topped with raw onion tomato with tangy spice powders.

MASALA KHICHIYA PAPAD

Ingredients

4 readymade khichiya papads
Oil for deep-frying
½ tablespoon butter
1 tablespoon red chilli-garlic chutney
Green chutney as required
1 medium onion, chopped
1 medium tomato, chopped
Chopped fresh coriander leaves as required
Chaat masala for sprinkling

Method

1. Heat sufficient oil in a kadai. Deep-fry papads till they puff up. Drain on absorbent paper.
2. Heat butter in a non-stick pan. Add red chilli-garlic chutney and sauté for a minute. Transfer in a bowl.
3. Spread some butter-chutney mixture and green chutney on each fried papad. Put some onion, tomato and chopped coriander on top. Sprinkle some chaat masala on top.
4. Serve immediately.
