MASALA DOSA CREPE

Ingredients

4 cups readymade dosa batter
Salt to taste
Coconut chutney for applying + to serve
Tomato-onion chutney for applying + for serving
Ready made aloo bhaji as required
1 medium onion, thinly sliced
4 eggs
Crushed Black peppercorns to taste
Red chilli powder for sprinkling
Chopped fresh coriander leaves for garnish

Method

1. Take dosa batter in a bowl. Add salt and mix well.
2. Heat a nonstick tawa. Drizzle oil and grease the tawa using a kitchen paper.
3. Pour a ladleful of dosa batter and spread it evenly to make a thin disc.
4. Drizzle some oil on the sides, add some of the coconut chutney and tomato onion chutney and mix well. Spread it evenly all over the disc.
5. Spread some aloo bhaji and spread it in the centre of the disc. Make a shallow cavity in the center. Sprinkle some onion slices around the cavity.
6. Break an egg in the cavity, sprinkle salt, crushed black peppercorns and red chill powder over it. Cover and cook for 2 minutes. Fold ¼ of four sides to make a square.
7. Gently transfer this masala dosa crepe on a serving plate. Garnish with coriander leaves.
8. Serve hot with coconut chutney and tomato onion chutney.
