Ingredients for Chicken Preparation:
Boneless chicken (thigh cubes) 700 g
Yogurt 2 tbsp
Cream 3 tbsp
Lemon juice 1 ½ tbsp
Salt 1/2 tbsp / to taste
Red chili powder 1 tbsp
Ginger garlic paste 1 tbsp
Black pepper powder 1/2 tbsp
Turmeric powder 1 tsp
Garam masala powder 1 tbsp
Orange food color 1/2 tsp
Oil 2 tbsp
Oil (for cooking) 2 tbsp

Ingredients for Fried Onion Paste:
Fried onion 1 cup
Cashew nuts 1/4 cup
Almonds 1/4 cup
Water as required

Ingredients for Masala Gravy:
Oil 1/4 cup
Ginger garlic paste 1 tbsp
Fried onion paste 1/4 cup
Tomato paste 2 tbsp
Salt 1/2 tsp / to taste
Black pepper powder 1 tsp
Garam masala powder 1/2 tsp
Cashew nuts 1/4 cup
Water if required
Yogurt 1/2 cup
Cream 1/4 cup
Red chili powder 1/2 tsp
Almonds 1/4 cup
Butter 2 tbsp
Veggies as required

Ingredients for Boiling Rice:
Water (for soaking) as required
Water as required
Guard Basmati Rice 2 cups
Vinegar 1 ½ tbsp
Oil 2 tbsp
Salt 1 tbsp

Ingredients for Fried Rice:
Oil 2 tbsp
Garlic (chopped) 1 tbsp
Carrots (chopped) 1/4 cup
Capsicum (chopped) 1/4 cup
Cabbage (chopped) 1/4 cup
Black pepper powder 1 tsp
Salt 1/2 tsp / to taste
Boiled rice
Green onion (chopped) as required



Directions for Chicken Preparation:
1. In a bowl add chicken, yogurt, cream, lemon juice, salt, red chili powder, ginger garlic paste, black pepper powder. turmeric powder, garam masala powder, orange food color, oil and mix well. Marinate for 30 minutes to 4 hours.
2. In a pan heat oil and add the marinated chicken. Cook until the chicken gets dry and fully tender.
Directions for Onion and Nut Paste preparation:
1. In a blender add fried onion, cashew nuts, almonds, water and blend into a smooth paste.
2. Your onion and nut paste is ready.
Directions for Masala Gravy Preparation:
1. Now in another pot, heat oil, add ginger garlic paste, and cook for 1-2 minutes.
2. Add onion and nut paste and cook for 2-3 minutes.
3. Add tomato paste and cook for a minute. Add water if needed.
4. Now add salt, black pepper, garam masala powder, red chili powder and cook for another 2-3 minutes.
5. Now add yogurt and cook for 4-5 minutes on medium-low flame.
6. Add cream, butter and cook until desired consistency has reached.
7. Take off flame and your gravy is ready. set aside
Directions for Fried Rice Preparation:
8. In a bowl add Guard Basmati Rice and soak for 25-30 minutes.
9. In a pot heat water and bring it to a boil. Add salt, oil, vinegar, soaked rice and cook until 80% done. Strain and set aside.
10. In a pot heat oil and add garlic. Saute for 1 minute.
11. Now add carrot, capsicum, cabbage, and cook for 1-2 minutes on high flame. Add salt, black pepper, and mix well.
12. Add boiled rice and green onion, give it a good mix on high flame for 1-2 minutes.
13. Your fried rice is ready.
14. Serve with cooked chicken, masala gravy, and sauteed veggies.
