Batter fried chicken strips tossed in spicy sauce.

MASALA CHICKEN FRENCH FRIES

Ingredients

400 grams boneless chicken, cut into thin strips
Salt to taste
Crushed black peppercorns to taste
1 tbsp red chilli paste
2 tsps red chilli powder
¼ cup corn starch
¼ cup rice flour
2 tsps lemon juice
1 eggs
1 tbsp oil + for deep frying
8-10 garlic cloves
1 medium onion, sliced
2-3 green chillies, slit
5-6 curry leaves
1 tbsp red chilli sauce
½ tsp dark soy sauce
2 tbsps chopped fresh coriander leaves
2 tbsps crushed roasted peanuts

Method

1. Take chicken strips in a bowl, add salt, crushed black peppercorns, red chilli paste, red chilli powder, corn starch, rice flour, lemon juice and egg and mix well. Set aside to marinate for 15-20 minutes.
2. Heat sufficient oil in a kadai, slide in the chicken strips and deep fry till golden and crisp. Drain on absorbent paper.
3. Heat 1 tbsp oil in a non-stick pan, add garlic cloves and sauté till golden brown. Add onion, green chillies and curry leaves and sauté till onion turns translucent.
4. Add red chilli sauce, dark soy sauce, salt, and crushed black peppercorns and mix well. Sauté for 1-2 minutes.
Add fried chicken, coriander leaves and peanuts and sauté for 1-2 minutes. Take the pan off the heat and transfer on to a serving plate and serve hot.
