Filling, delicious & masaledar, try this one!MASALA ANDA ROLLIngredients8-10 hard-boiled eggs, peeled4 whole wheat parantha2 tbsps oil1 medium onion, finely chopped+ for sprinkling 2-3 green chillies, choppedA pinch of turmeric powder½ tsp Tata Sampann Chilli Powder¼ tsp coriander powder¼ tsp cumin powderSalt to taste 6-8 fresh mint leaves1 tbsp chopped fresh coriander leaves + for sprinkling 2 tbsps butterMethod1. Vertically halve the hard boiled eggs. 2. Heat oil in a non-stick pan. Add onion and sauté till it turns golden. 3. Add green chillies, mix and cook for a minute. 4. Add turmeric powder and Tata Sampann Chilli Powder and mix well. Add coriander powder and cumin powder and sauté for a minute.5. Add the halved eggs with the yolk side facing down. Sprinkle salt and cook for 2-3 minutes. 6. Gently flip each egg half and continue to cook for 1-2 minutes more. 7. Tear mint leaves and sprinkle on top of the eggs mixture. Add coriander leaves and butter and gently crush the eggs with the back of a spoon.8. Sprinkle salt, mix and take the pan off the heat.9. To make the roll, heat a non-stick tawa. Place the parantha on it and cook for a minute on both sides. 10. Place the parantha on a worktop, place a portion of the eggs mixture, sprinkle a little chopped onion and coriander leaves. Roll the parantha and place on a serving plate.11. Wrap if required and serve immediately.
