Ingredients:
60 gm brown sugar
140 gm tapioca starch
70ml water
1 cup mango purée
2 cups cold milk
1 cup vanilla ice cream
2 tbsp condensed milk
1 tbsp rose syrup
chopped nuts
mint leaves
chopped mangoes for garnishing

Method:
Boba Pearls:
In a pan add brown sugar, and water, let the sugar melt and later add 5 gms tapioca starch and mix well. Put it over gas and stir until thick.
Switch off the flame and add the remaining tapioca flour (135 gm).
Cool this mixture and knead well and make a smooth dough.
Cover with cling wrap to avoid cracks on the dough.
Roll to make a thin cylinder and cut it into small pieces.
Roll to make small pearls.
Sprinkle flour on them and coat well to avoid sticking.
Add the pearls to boiling water and cook for 20 minutes on medium flame turn off the flame and cover and rest for 30 minutes, till they become translucent.
Drain the water and transfer the cooked boba to brown sugar syrup/ honey.

Mango Milk:
Add chilled milk, mango purée and condensed milk to a blender and pulse for a minute.
Your rich mango milk will be ready.

Assembly:
Boba pearls
Rich Mango milk
Chopped mangoes
Vanilla ice cream
Rose syrup
Chopped mangoes
Fresh mint leaves
Nuts
