Mango Chilli Chicken | Sanjeev Kapoor Khazana

A twist to the regular chilli chicken recipe with the addition of mango puree. A must try !

MANGO CHILLI CHICKEN

Ingredients

250 grams boneless chicken, cut into 1 inch pieces
1 cup fresh mango puree
1-2 fresh red chillies, diagonally sliced
Salt to taste
Crushed black peppercorns to taste
2 tablespoons cornflour
1 egg
1 tablespoon oil + for deep-frying
1 tablespoon finely chopped garlic
½ tablespoon finely chopped ginger
1 tablespoon finely chopped celery
3-4 spring onion bulbs, finely chopped
1 teaspoon soy sauce
2 teaspoons oyster sauce
1 cup chicken stock
2 tablespoons cornflour slurry
1 tablespoon diagonally sliced spring onion greens + for garnishing

Method

1. Put chicken pieces in a bowl. Add salt, crushed peppercorns, cornflour and egg and mix well. Set aside.
2. Heat sufficient oil in a kadai. Deep-fry chicken pieces till golden brown. Drain on absorbent paper.
3. Heat 1 tablespoon oil in a non-stick pan. Add garlic, ginger and celery, mix and sauté for a minute.
4. Add spring onion bulbs and red chillies and mix. Add soy sauce and oyster sauce, mix well and cook for a minute.
5. Add stock, stir and bring to a boil. Add mango puree and mix well. Add salt and crushed peppercorns, mix well and cook for a minute.
6. Add slurry, mix and cook till the sauce thickens. Add fried chicken pieces, mix well and simmer for a minute. Add spring onion greens and mix well.
7. Garnish with spring onion greens and serve hot.
