Mango Cake | Sanjeev Kapoor Khazana

Freshly baked mango flavoured cake studded with chopped pistachios.

MANGO CAKE

Ingredients

½ cup mango puree
1 medium mango, peeled and chopped
1½ cups refined flour (maida) + for dusting
½ cup butter + for greasing
½ cup castor sugar
1 egg
1 teaspoon vanilla essence
2 tablespoons blanched pistachios + for topping

Method

1. Preheat oven to 180ºC. Grease a loaf tin with some butter and dust with some flour.
2. Cream together butter and castor sugar in a bowl till light and fluffy. Add egg and beat well. Add vanilla essence and mango puree and beat well.
3. Sift in flour, add chopped mango and pistachios and fold well.
4. Pour batter in lined tin and top with some pistachios. Put the tin in the preheated oven and bake for 25-30 minutes.
5. Remove from heat, cool to room temperature, demould and slice.
6. Serve.
