Malwani Prawns | Sanjeev Kapoor Khazana

Prawns cooked in spicy freshly ground coconut red chilli masala.

MALWANI PRAWNS

Ingredients

1 teaspoon Malwani masala
½ cup medium prawns, shelled and deveined with tails intact
½ teaspoon turmeric powder
Salt to taste
2 tablespoons oil
1 teaspoon coriander seeds
3-4 dried red chillies
1 medium onion, finely chopped
½ cup fresh scraped coconut
1 teaspoon rice
1 tablespoon chopped garlic
½ cup coconut milk
3-4 kokum petals

Method

1. Take prawns in a bowl. Add turmeric powder and salt, mix and set aside to marinate.
2. Heat 1 tablespoon oil in a non-stick pan. Add coriander seeds and sauté till fragrant.
3. Add broken dried red chillies and sauté for a minute. Add half the onion and sauté till golden.
4. Add coconut, mix and roast for 30 seconds. Switch off heat and add rice.
5. Grind the roasted spice-coconut mixture alongwith some water to a fine paste.
6. Heat remaining oil in a non-stick pan. Add remaining onion and sauté on high heat till golden.
7. Add garlic and sauté till golden. Add prepared paste, mix and cook for a minute.
8. Add marinated prawns, mix and cook for a minute.Reduce heat, add Malwanimasala and mix well. Add some water, mix and cook on low heat for 5 minutes.
9. Add coconut milk and mix well. Add kokum petals, mix and cook on low heat for 2-3 minutes.
10. Serve hot garnished with a fried dried red chilli.
