Malai ki Sabzi | मलाई की सब्ज़ी | Quick and Easy Recipe | Sanjeev Kapoor Khazana

The name might sound confusing, but this dish is here to make you wanting for more!
Fresh malai / cream, sauteed with spices to make a delicious, lip smacking sabzi that goes perfectly with paranthas or nans or even rice!

MALAI KI SABZI

Ingredients

350 grams fresh malai
2 tbsps oil
1 tsp cumin seeds
1 tbsp chopped garlic
½ tbsp chopped ginger
2 green chillies, chopped
1 large onion, finely chopped
1 large tomato, finely chopped
Salt to taste
1 tsp sugar
1 tsp red chilli powder
1 tbsp coriander powder
1 tsp cumin powder
½ tsp turmeric powder
½ tsp garam masala powder
¼ tsp roasted dried fenugreek leaves (kasuri methi) powder
2-3 tbsps chopped fresh coriander leaves
Fresh coriander sprig for garnish
Paranthe to serve

Method

1. Heat oil in a non-stick pan. Add cumin seeds and let them change colour.
2. Add garlic, ginger, and green chillies and sauté for 1 minute. Add onion, mix and cook till it turns golden brown.
3. Add tomato, salt and sugar and mix well. Cook till it turns soft and pulpy.
4. Add red chilli powder, coriander powder, cumin powder and turmeric powder and mix well. Cook for 1 minute.
5. Add fresh malai and mix well. Cook for 1-2 minutes.
6. Add garam masala powder, roasted dried fenugreek leaves powder, and coriander leaves and mix well.
7. Take the pan off the heat and transfer the mixture into a serving bowl. Garnish with coriander sprig and serve hot with paranthe.
