Malai Boti Biryani
Ingredients for Malai Boti:
Chicken boneless 700 g
Yogurt 1 cup
Cream 1/2 cup
Green chilies (chopped) 1 tbsp
Lemon juice 1 tbsp
Black pepper powder 1 tsp
White pepper powder 1 tsp
Oil 2 tbsp
Ginger garlic paste 1 tbsp
Salt 1 tsp
Cumin powder 1/2 tsp
Coriander powder 1/2 tsp
Oil (for cooking) 1 tbsp

Ingredients for Almond and Cashew Nut Paste:
Almond + cashew nuts 10-12 each
Water 1/4 cup

Ingredients for Boiling Rice:
Water 4 cups
Soaked rice 2 cups
Bay leaf 1
Cloves 3-4
Cinnamon stick (1 inch) 2
Salt 1 tsp
Oil 1 tbsp

Ingredients for Biryani Masala:
Oil 1/4 cup
Onion (chopped) 1 cup
Bay leaf 1
Ginger garlic paste 1 ½ tbsp
Star anise 2
Cinnamon sticks (1 inch) 2
Cloves 5-6
Black cardamom 2
Black peppercorns 8-10
Cumin seeds 1 tbsp
Cumin powder 1 tsp
Black pepper powder 1 tbsp
White pepper powder 1 tbsp
Coriander powder 1 tsp
Water 1/2 cup
Salt to taste
Yogurt 2 cups
Cream 1 cup
Green chilies (round cut) 3-4
Almond cashew nut paste 2 tbsp

Ingredients for Layering:
Biryani Masala as required
Boiled Rice as required
Malai Boti as required
Fried onion as required
Black pepper powder (for sprinkle) as required
Mint leaves as required
Green coriander (chopped) as required
Lemon slices as required

Directions for Malai Boti Preparation:
1. In a bowl add chicken, yogurt, cream, green chilies, lemon juice, black pepper powder, white pepper powder, oil, ginger garlic paste, salt, cumin seeds, coriander powder and mix well. Marinate it for 25-20 mins.
2. On a pan heat oil, and cook marinated chicken for 10-12 mins or until fully cooked. Give it coal smoke for 1 minute and set aside.
Directions for Boiling Rice:
3. In a pot heat water and add bay leaf, cloves, cinnamon sticks, salt, oil and bring the water to boil.
4. Now add soaked rice and boil until 80% done. Strain and set aside.
Directions for Biryani Masala Preparation:
5. In a pot heat oil and add onion and cook until translucent. Now add bay leaf, cloves, star anise, cinnamon sticks, black peppercorns, black cardamom and cook for 1-2 minutes.
6. Now add ginger garlic paste and cook for 2-3 minutes. Add salt, white pepper powder, cumin seeds, black pepper powder, cumin powder, coriander powder and cook for another 2-3 minutes.
7. Add water and cover with lid. Cook for 10 minutes. Now add yogurt, almond cashew nut paste and mix well. Now add cream, green chilies and cook for 2-3 minutes. Your Biryani masala is ready.
Directions for Layering:
8. In a pot add a layer of prepared biryani masala, top it with boiled rice and sprinkle black pepper powder. Add biryani masala again. Layer prepared malai boti and the remaining boiled rice. Sprinkle black pepper powder.
9. Garnish it with fried onion, mint leaves, lemon slices, coriander and steam it for 10-15 minutes. Take off flame and serve hot.
Preparation time: 10-15 mins
Cooking time: 35-40 mins
Serving: 3-4
