Malabari Paratha Chicken Ghee roast Ingredient QuantityChicken cut into cube size (Boneless) 200 gmGhee 3-4 tbsp Dried red chilies 4-5 no.Coriander seeds 1 tbspCumin seeds 1 tspFennel seeds 1 tspCinnamon stick ½ inch Black peppercorns 1 tspCloves 3-4 no.Lemon juice 1 no.Ginger chopped 1 inchGarlic chopped 4-5 no.Curry leaves 16-18 no.Onion slice 1 no. Turmeric powder ¼ teaspoonSalt to tasteYogurt ¼ cupJaggery grated 1 tspTamarind pulp 1 tbspLettuce for servingMalabari paratha 2 no. Method:1. Heat a pan and Dry-roast red chilies, coriander seeds, cumin seeds, fennel seeds, cinnamon stick, black peppercorn and cloves till fragrant. Transfer into a grinder; add lemon juice, ginger, garlic, 5-6 no. of curry leaves and ½ cup of water and grind to a fine paste. 2. Mix the chicken with prepared paste, add some salt and turmeric powder, mix well and keep it aside for 1 hour. 3. Heat ghee in a pan, add remaining curry leaves and onion, mix well and sauté for 1 min.4. Add marinated chicken, mix well and cook for 12-15 Min.5. Add yogurt, jaggery, and tamarind pulp, mix well and cook till mixture is dry.6. Meanwhile heat paratha in a pan from both sides.7.
