A Maharashtrian-special recipe prepared with crushed peanuts, onions and a mix of masalas.

MAHADYA

Ingredients

2 cups raw peanuts
4 tbsps oil
1 tsp cumin seeds
A sprig of curry leaves
A pinch of asafoetida (hing)
2 medium onions, chopped
Salt to taste
1 tsp red chilli powder
½ tsp turmeric powder
2 tsps kanda-lasun masala
2-3 tbsps chopped fresh coriander
Rice bhakri for serving

Method

1. Heat a pan. Dry roast the peanuts on medium heat for 6-8 minutes. Transfer in a parat and allow to cool. Remove the skin.
2. Crush the peanuts coarsely with the help of a stone grinder.
3. Heat oil in a kadai. Add cumin seeds and once they start to change the colour , add curry leaves, hing and mix well.
4. Add onions, salt and cook till onions are golden brown.
5. Add red chilli powder, turmeric powder, kanda lasun masala and mix well.
6. Add ¼ cup water and mix well. Cook for 2 minutes on medium heat.
7. Add crushed peanuts and mix well. Add coriander and mix well.
8. Transfer into a serving bowl. Serve hot with rice bhakri.
