A Maharashtrian-special recipe prepared with crushed peanuts, onions and a mix of masalas.MAHADYAIngredients2 cups raw peanuts4 tbsps oil1 tsp cumin seedsA sprig of curry leavesA pinch of asafoetida (hing)2 medium onions, choppedSalt to taste1 tsp red chilli powder½ tsp turmeric powder2 tsps kanda-lasun masala2-3 tbsps chopped fresh corianderRice bhakri for servingMethod1. Heat a pan. Dry roast the peanuts on medium heat for 6-8 minutes. Transfer in a parat and allow to cool. Remove the skin.2. Crush the peanuts coarsely with the help of a stone grinder.3. Heat oil in a kadai. Add cumin seeds and once they start to change the colour , add curry leaves, hing and mix well.4. Add onions, salt and cook till onions are golden brown.5. Add red chilli powder, turmeric powder, kanda lasun masala and mix well.6. Add ¼ cup water and mix well. Cook for 2 minutes on medium heat.7. Add crushed peanuts and mix well. Add coriander and mix well.8. Transfer into a serving bowl.
