Magical green sauce tacos aka sausage beans n greens

Magical? Well that is what my wife named this after she ate it, so who am I to argue. Anyway, it's mainly the amazing green sauce that is magical, and mostly for the bright green color that comes from briefly blanching and then blending fresh greens. I call it a kale pesto in the video, which I think is as good a description as any.

Baked tacos:
1) Load beans, meat (optional) and jalapeno (optional) into soft corn tortillas. Fold each one over to hold the next closed in a row, then cover with a line of cheese -- how much you want this smothered is up to you.
2) Bake in a hot grill or oven until cheese is melted and tacos are heated through, then remove from heat.

Sauce:
1) Destem and chop kale. Chop onion, garlic, cilantro and blanch all the vegetables in boiling water for one minute. Remove and transfer to blender.
2) Add lemon juice, salt, and water sufficient to allow for blending. Blend until sauce is desired consistency.
3) Mix in high quality olive oil (you can do this prior to blending but it makes cleaning the blender harder) and serve around or over your hot tacos!
