Your favourite dish, egg bhurji flavoured with the special Madras Curry powder.MADRAS EGG BURJIIngredients8 eggs 1½ tsps Madras curry powder2 tbsps oil1 tsp cumin seeds2 green chillies, chopped2 medium onions, choppedSalt to taste10-15 curry leaves2 medium tomatoes, chopped¼ tsp turmeric powder1½ tsps red chilli powderCrushed black peppercorns to taste2-3 tbsps chopped fresh corianderChapati for servingMethod1. Heat oil in a pan. Add cumin seeds and once they start to change the colour, add green chillies and mix well.2. Add onions, salt and sauté till golden brown. Add curry leaves and mix well.3. Add tomatoes and cook on medium heat for 4-5 minutes or till pulpy.4. Add turmeric powder, red chilli powder, Madras curry powder and mix well.5. Break eggs in the pan and mix well. Cook for 4-5 minutes.6. Add crushed black peppercorns, coriander and mix well.7.
