MACKEREL YAM POTTAGE

COOK TIME: 20 MINUTES
SERVES: 4

INGREDIENTS
tuber of yam, diced.
1 litre beef stock
1 medium tomato
1 medium red onion
4 cloves of garlic
7 Scotch bonnet pepper
2 tbsp fish powder
2 tbsp shrimp powder
400g mackerel in tomato sauce
cup palm oil
Salt

DIRECTION
Pour diced yam into a saucepan over medium heat, add 1 litre of beef stock, tomato, onion, scotch bonnet pepper, salt, stir and let boil for 10 minutes.
Take out the tomatoes, onion, scotch bonnet pepper, add garlic and blend into a smooth mixture.
Strain the mixture onto the yam and let simmer till the stock reduces by 4 inch and thickened.
Add fish and shrimp powder, stir and let simmer for a minute
Add palm oil and mackerel tomato sauce, stir and let simmer for a minute.
Adjust salt
Mackerel yam pottage ready to serve. Serve with mackerel fish.
