When it is Lunchtime, we all look forward to having that delicious meal packed in our Lunch Box. What better combination than Rotis and steamed Rice along with a gravy, bhaji, and a sweet dish. These are the items that make the basic Indian Lunch Box. Given below are the ingredients that go into making the different dishes of this particular Lunch Box Series No 1 (Veg).

Ingredients:
(In the order of instructions)

Vangi/Brinjal Masala:
12 Baby Brinjals
1/2 cup roasted Peanuts
11/2 cup grated Coconut
1/2 tsp Red Chilli powder
1/2 tsp Turmeric powder
2 tsp Goda Masala
4 Green Chillies
A little Tamarind
11/2 tsp Grated Jaggery
1/2 cup chopped Coriander leaves
Salt to taste
4 tbsp Oil
1 tsp Mustard seeds
1 tsp Cumin seeds
1/4 tsp Hing
Few Curry leaves

Kairi Amti:
1 raw Mango
4 dry Red Chillies
1/4 cup dry Coconut pieces
11/2 tsp Red Chilli powder
1/4 tsp Turmeric powder
11/2 tsp Ginger Garlic paste
1 tsp Cumin
3 tbsp Oil
1 tsp Mustard seeds
Few Curry leaves
1/4 tsp Hing
1 cup Tuvar Dal
21/2 cups Water
Salt to taste
Coriander leaves for garnish
