LOBIA VADAIngredients2 cups soaked black eyed peas (lobia), drained tsp turmeric powder tsp red chilli powder tsp asafoetida (hing)1 cup shredded spinach leaves1 medium onion, chopped2 tsps grated ginger2 green chillies, choppedSalt to taste2 tbsps chopped fresh coriander leavesOil for deep fryingGreen chutney for servingMethod1. Transfer the lobia in a blender jar. Add turmeric powder, red chilli powder, asafoetida and grind to coarse paste.2. Transfer in a bowl and add spinach leaves, onion, ginger, green chillies, salt, coriander and mix well.3. Heat sufficient oil in a kadai.4. Divide the mixture into equal portions and roll into balls. Flatten each ball.5. Slide into hot oil and deep fry till golden brown and crisp.6.
