1 large onion, sliced
4 garlic cloves, thinly sliced
1 hot pepper, sliced (optional)
1/4 cup cilantro, chopped, divided in half (I used shadow beni/culantro)
1 teaspoon ceylon cinnamon
1 teaspoon ground turmeric (or 1/2 teaspoon fresh)
1 teaspoon garam masala
1 tb freshly grated ginger
1 can diced, unsalted tomatoes
1 cup whole fatty coconut milk
1 pound lion fish filets (can be subbed with whatever fish you like/have)
