Kumbakonam degree coffee - To me, it signifies a very strong coffee with an amazing aroma - the taste of the coffee lingers on, long after u r done with the savouring of it.
This kind of swishing from the tumbler to dabara is what gives the Cappuccino effect!
This is the coffee filter, a traditional one, made of Brass. My grandma gifted this to me, many yrs ago. Trust me, The coffee flavour is multi fold more when decoration is made in this Brass filter
Plantation A and Plantation B mixed with some chicory is my way - add 4 or 5 tbsp of coffee powder.. my coffee filter is huge one.
Tips for a good coffee:
Level the coffee powder - very important for a thick decoction
Add boiling water slowly in a circular movement over the coffee powder.
Close with a bowl. Fill it with hot water to facilitate the extraction process
We need to use full cream milk for the authentic taste of #KumbakonamDegreeCoffee.
Wait for 15 or 20 mins - in 10 mins or so tap her head gently with the bowl of hot water - you will get a good decoction!
In the olden days, milk that was certified as pure with a lactometer was called “degree milk”, and coffee that was prepared with this milk became popular as “degree coffee”. ..But, an amusing fact is that there is no place lke #KumbakonamDegreeCoffee in Kumbakonam, such a place doesn’t exist!!

Kumbakonam Degree Coffee
Ingredients:
Any good brand coffee powder - 4 or 5 tbsp
Water - 1 ½ cups of water
Milk - as Rey
Sugar to taste
Method:
Boil the water
Meanwhile add the coffee powder to a filter and level it evenly
Pour the hot water water in a circular movement over the coffee powder till 3/4th of the filter is filled
Close with bowl on top
Fill the bowl with hot water, to facilitate extraction
Tap the bowl gently in 10 mins
After 15 or 20 mins, strong coffee decoction is ready
Boil milk
Pour some decoction into a tumbler
Add sugar to taste
Mix it well
Now, add the boiling milk to the decoction
Swish the coffee into another tumbler or Dabara to get a foamy look
