A tangy twist to your regular rice that will provide you the burst of fresh lemony flavour along with a lot of crunchy elements for the perfect contrast of textures.LEMON RICEIngredientsJuice of 1 lemon3 cups boiled kolum rice2 tsps sesame oil1 tsp mustard seeds2 tsps split skinless black gram (urad dal)1 tsp split Bengal gram (chana dal)8-10 cashew nuts, roughly chopped1-2 green chillies, chopped1 inch ginger, finely chopped¼ tsp turmeric powder10-12 curry leaves¼ cup raw peanuts, friedSalt to tastePapads to serveMethod1. Heat oil in a non-stick kadai, add mustard seeds and let them splutter. Add split skinless black gram and Bengal gram and sauté till the gram mixture turns golden brown. 2. Add cashew nuts and sauté for a few seconds. Add green chillies and mix well. Add ginger and mix well. 3. Add turmeric powder and sauté well. Add curry leaves and mix and switch the heat off. Add peanuts and lemon juice and mix well.4. Take rice in a large bowl, add salt in the kadai and salt in the rice.5. Transfer the rice mixture into the kadai and mix till well combined.
