A traditional south Indian recipe made using brown rice. The unique texture of this recipe and the flavours make it a crowd-pleaser.LEMON BROWN RICEIngredients1 tbsp lemon juice1½ cups Daawat Quick Cooking Brown Basmati RiceSalt to taste½ tsp turmeric powder2 tbsps coconut oil1½ tsps split Bengal gram (chana dal)1 tsp split skinless black gram (dhuli urad dal)½ tsp asafoetida (hing)1 tsp mustard seeds4 dried red chilllies, stemmed½ cup raw peanuts2 sprigs of curry leavesSalt to tasteChopped fresh coriander leaves to sprinkleFried popdums for servingMethod1. Take Daawat Quick Cooking Brown Basmati Rice in a bowl and wash thoroughly2-3 times. Add sufficient water and soak for 30 minutes. Drain the water.2. Heat sufficient water in a deep nonstick pan. Add salt, turmeric powder, drained rice and cook for 15 minutes. Drain the water and set aside.3. Heat coconut oil in a nonstick pan. Add chana dal and sauté for a few seconds.4. Add urad dal, hing, mustard seeds and once they start to splutter, add dried red chillies, peanuts, curry leaves and sauté for 1 minute.5. Add the cooked rice, salt and mix well. Cook for 2-3 minutes.6. Switch off the heat, sprinkle lemon juice and mix well. 7.
