Lauki Ki Kheer Recipe in Hindi | Geeta's Kitchen

LAUKI KI KHEER
INGREDIENTS
• Bottle Gourd grated 1 cup( Lauki kadu kas)
• Sugar 2 tbsp.( coz I am using condense milk, if not using condense milk then add 3 tbsp. sugar)
• Milk ½ ltr + ¼ cup Milk to soak dry fruits
• Cashew nut 10
• Almonds 10
• Khoya / condense milk 3 tbsp (both are optional)
• Cardamom powder ¼ tsp
• Ghee 3 tbsp
• Mix dry fruits 3 tbsp ( chopped)
• Saffron thread 3-4

METHOD
• First make paste of cashew nut and almond with the help of milk . keep aside.
• Take a pan on gas heat it add ghee and chopped mix dry fruits roast it till change color and crunchy. Keep aside.
• Again on same pan add remaining ghee and add grated bottle gourd fry it till get dry now add paste of cashew nut and almond cooked well for atleast 7 to 8 mins.(if its not cooked well and you add milk on it milk will curdle).
• Now add milk and simmer on low flame for 10 to 12 minutes. Then add sugar and milkmaid cook it for 5 min stir it frequently cook till creamy and desired consistency.
• Now add Roasted dry fruits and dash of cardamom powder, off the gas.
• Garnishing it with dry fruits and saffron threads.
• Serve hot or cold as per your choice
