Lauki Chana Dal My Way! Chana Dal for Rotis! Video in

Ingredients:
Small bottle gourd/Lauki - 1
Chana dal - 1 cup or 200 gms
Onion medium- 2
Tomatoes - 4
Green chillies - 2
Ginger - 1 inch
Dry red chillies - 2 or 3
Bay leaves - 2
Asaefotida- tsp
Cumin seeds - 1 tsp
Dhaniya powder - 2 tsps
Jeera powder - 1 tsp
Red chilli powder - 1 tsp or to taste
Turmeric powder - tsp
Kasoori methi - 2 tsp
Ghee - 1 tbsp
Oil - 1 tbsp
Kitchen king masala - 1 tsp
Salt to taste
Coriander leaves to garnish
Method:
Soak the chana dal for at least 1 hour after thoroughly washing it in running water
Meanwhile peel the Lauki/bottle gourd
Chop them as desired
Pressure cook the chopped Lauki & dal adding little of turmeric, red chilli powder & salt
3 whistles or 15 mins pressure cooking is what we need - each cooker may be different
Now, chop the onions finely
Grind the tomatoes together with the green chillies & ginger
In a small bowl, add coriander powder, jeera powder,turmeric, red chilli powder, asaefotida & kasoori methi
Adding few tsps of water to make thin smooth paste
Keep the spice mix asaefotida aside
Heat a oil & ghee in a thick pan
Add the bay leaves
Add the dry red chillies
Now add the jeera
When jeera crackles add the onions
Stir fry over medium flame till the onions are golden
Now add the spice mix paste
Saut well over medium flame
Then, add the tomato ground mix
Stir fry well closing the pan over medium flame
Open to see that the oil has separated
Its now time to add the cooked Lauki Dal
Keep mixing everything well together
Add 1 tsp of jaggery and mix
Close & cook for few minutes over medium flame
Open and add kitchen king masala or garam masala
Cook for few more mins
Garnish with coriander leaves
Enjoy Lauki Chana Dal with Phulkas or Rotis
