You will love it.LAUKI BHARTAIngredients400 grams bottle gourd (lauki)Oil for brushing2 tbsps mustard oil1 tsp cumin seeds1 tbsp finely chopped garlic2-3 green chillies, slit1 medium onion, finely chopped2 medium tomatoes, gratedSalt to taste1 tsp red chilli powder¼ tsp turmeric powder1 tsp cumin powder1 tsp coriander powder1 tbsp lemon juice2 tbsps chopped fresh coriander leaves2 tbsps roasted peanut powderFresh coriander sprig for garnishRotis to serveMethod1. Brush some oil on the surface of the bottle gourd and roast it over direct flame till well charred on all sides. 2. Soak the bottle gourd into a bowl of water and remove the charred skin. Discard the water.3. Finely chop the bottle gourd.4. Heat mustard oil in a non-stick. Add cumin seeds and let them change colour.5. Add garlic and green chillies and sauté for 1 minute.6. Add onion and sauté till it turns golden brown. Add tomatoes and mix well. Sauté for 2-3 minutes. 7. Add salt, red chilli powder, turmeric powder, cumin powder and coriander powder and mix well. Cook for a minute.8. Add ¼ cup water, mix and cook till the oil separates. 9. Add the bottle gourd and mix well. Add lemon juice, coriander leaves and peanut powder and mix well. 10.
