A quick and easy recipe to make with bottle gourd and flax seeds. Healthy and yummy!LAUKI AUR ALSI KI SABZI (Teesi Sajmain)Ingredients500 grams bottle gourd (lauki) ¼ cup flax seeds (alsi)2-3 tbsps mustard oil¼ tsp asafetida (hing)¼ tsp turmeric powderSalt to taste2-3 tbsps chopped fresh coriander leaves½ lemonFresh coriander sprig for garnishRotis for servingMethod1. Peel the bottle gourd and cut into 1 inch cubes. 2. Dry roast the flax seeds till they pop, transfer on a plate and allow to cool.3. Transfer roasted flax seeds in motor and finely pound it with the pestle.4. Heat mustard oil in a kadai and let it smoke, reduce the heat, add asafetida, bottle gourd and sauté on a high heat for 2-3 minutes. Add salt and turmeric powder and mix well.5. Cover with the lid and cook for 5-10 minutes.6. Add 2-3 tbsps of powdered flax seeds, coriander leaves and mix well.7. Switch off the heat, squeeze lemon and mix well.8.
