Pasta rolls stuffed with spinach and ricotta cheese and baked with a generous amount of tomato concasse and more cheese. LASAGNA ROLLS - (Serves - 4)Ingredients4 lasagna sheets, blanched1 tablespoon oil1 tablespoon chopped garlic½ small bunch spinach leaves, blanched and choppedSalt to tasteCrushed black peppercorns to taste¼ cup ricotta cheeseReadymade tomato sauce as required½ cup grated mozzarella cheese2-3 tablespoons grated parmesan cheeseMethod1. Preheat oven to 180º C.2. Heat oil in a non-stick pan. Add garlic and sauté for 30 seconds. Add spinach and mix. 3. Add salt, mix and cook for 1 minute. Add crushed peppercorns, mix and cook for 30 seconds. Remove from heat and cool. 4. Add ricotta cheese and mix. Fill a piping bag with spinach-cheese mixture. 5. Place each lasagna sheet on the worktop and cut into halves horizontally. Pipe out spinach-cheese mixture on each strip, spread and roll.6. Line a glass baking tray with lasagna rolls and spread some tomato sauce on top. Put mozzarella cheese and parmesan cheese on top. 7. Put the dish on a baking tray, place the tray in the preheated oven and bake for 10-15 minutes.8.
