The unusual yet a unique way of using lasagne and turning them into these rolls filled with finely chopped grilled chicken breasts and creamy cheesy sauce, and baked to perfection, is an amazing recipe that you must try out!LASAGNA ROLL UPSIngredients2 boneless chicken breasts4 boiled lasagna sheets2 tbsps yogurtSalt to tasteCrushed black peppercorns to taste½ tsp all spice1 tsp garlic paste1 medium onion, grated1 tsp cumin powder2 tsps olive oil + for sprinkling + to serve1 tsp butterGrated mozzarella cheese as requiredDried red chilli flakes for sprinkling Green olives slices for garnishChopped fresh parsley leaves for garnishBlack olive slices for garnish Sauce1½ tbsps butter2 tbsps finely chopped garlic2 tbsps refined flour (maida)1½ cups milk Salt to tasteCrushed black peppercorns to taste2 cheese slicesMethod1. Take chicken breasts in a bowl. Add yogurt, salt, crushed black peppercorns, all spice, garlic paste, grated onion, and cumin powder and rub the spices well on the chicken breasts. Set aside to marinate for 20-25 minutes.2. To make the sauce, heat butter in a non-stick pan. Add garlic and sauté for 1 minute. 3. Add refined flour and mix well. Sauté for 1-2 minutes.4. Stir in the milk and mix till well combined. Cook for 3-4 minutes or till the mixture thickens. 5. Add salt and crushed black peppercorns and mix well. Add the cheese slices and mix, cook till it melts. 6. Heat olive oil and butter in a non-stick grill pan. Place the chicken and grill on high heat for 3-4 minutes. Flip and cook the other side for 3-4 minutes as well. Reduce the medium heat, continue to cook till the chicken is done. 7. Preheat the oven at 180º.8. Finely chop the grilled chicken breasts. Transfer it into a bowl.9. Add a portion of the sauce on the base of a rectangle glass casserole. 10. Place a lasagna sheet on the worktop, apply some sauce over it. Add a portion of the chicken and spread it evenly. Sprinkle mozzarella cheese and tightly roll it. Place it in the prepared casserole. Similarly, repeat the same with the remaining lasagna sheets and arrange into the casserole. 11. Drizzle remaining sauce over the lined lasagna rolls, sprinkle mozzarella cheese and drizzle olive oil. Sprinkle red chilli flakes and place the casserole in the preheated oven. Bake for 10-15 minutes. 12. Garnish with green olive slices, parsley leaves and black olives. Serve hot with olive oil and red chilli flakes.
