Kurmure Ka Upma | Cooksmart | Sanjeev Kapoor Khazana

A yummy upma made with Puffed rice makes for an interesting snack or breakfast recipe
KURMURE KA UPMA

Ingredients

3 cups puffed rice (kurmura)
2 tbsps oil
1 tsp mustard seeds
¼ cup roasted peanuts
1 medium onion, finely chopped
10-12 curry leaves
¼ cup grated carrot
1 medium green capsicum, finely chopped
2-3 green chillies
1 tbsp rasam powder
Salt to taste
½ lemon

Method

1. Place a strainer over a bowl, put the puffed rice into the strainer and pour over it so they become moist.
2. Heat oil in a non-stick pan, add mustard seeds and let them splutter. Add peanuts and onion and sauté till the onion turns translucent. Add curry leaves and carrot and mix well. Add capsicum and mix well.
3. Finely chop green chillies and add. Add rasam powder and mix well. Add puffed rice and mix well. Add salt and mix well. Squeeze the juice of ½ lemon and add and mix well. Simmer for 1-2 minutes.
4. Transfer onto a serving plate and serve hot.
