Kung Pao Noodles

Ingredients for Chicken Preparation:
Boneless chicken (cubes) 500 g
Soy sauce 5-6 tbsp
Egg white 1
Vinegar 1 tbsp
Corn flour 2 tbsp
Black pepper powder 1 tbsp
Oil (for frying) as required

Ingredients for Kung Pao Sauce:
Water 1/2 cup
Corn flour 3 tbsp
Vinegar 2 tbsp
Dark soy sauce 2 ½ tbsp.
Soy sauce 2 tbsp
Sugar 1 tbsp

Ingredients for Kung Pao Noodles:
Guard Spaghetti 450 g
Oil 2 tbsp
Salt 1 tsp
Water as required
Oil 2 tbsp
Ginger (Julienne) 2-3 tbsp
Garlic (chopped) 2 tbsp
Yellow capsicum (cubes) 2 cups
Green onion 1/4 cup
Cooked chicken
Dried Red whole chilies 1 cup
Mixed sauce
Chicken stock 2 cups
Roasted peanuts 1/2 cup
Boiled spaghetti

Directions for Chicken Preparation:
1. In a bowl add chicken, soy sauce, egg white, vinegar, cornflour, black pepper and mix well. marinate for 15-20 minutes.
2. In a pan heat oil and add marinated chicken and cook until chicken is half done. Set aside.
Directions for Kung Pao Sauce Preparation:
3. In a bowl add water, cornflour, vinegar, dark soy sauce, soy sauce, sugar and mix well. set aside.
Directions for Kung Pao Noodles Preparation:
4. In a pot heat water, add oil, salt, and bring it to a boil. Now add Guard Spaghetti and boil until 80% done. Strain and set aside.
5. In a pan heat oil and add ginger and garlic. Saute for a minute.
6. Now add capsicum, green onion, and saute for 2 minutes.
7. Add chicken, red chilies and cook for 2 minutes.
8. Add chicken stock and bring it to boil.
9. Add prepared sauce and cook until it thickens.
10. Add roasted peanuts and cook for 2-3 minutes.
11. Add boiled spaghetti and toss it well. Add green onion and mix again.
12. Lastly, garnish with roasted peanuts, green onion again and your Kung Pao Chicken is ready.
Preparation time: 15 mins
Cooking time: 30-35 mins
