Kothimbir Wadi Waffle | Cooking Classy with Afraz | Sanjeev Kapoor Khazana

One of the most popular snacks from the Maharashtrian cuisine made in the shape of waffles.

KOTHIMBIR WADI WAFFLE

Ingredients

1 large bunch fresh coriander leaves (kothimbir) + for garnishing
6 tablespoons gram flour (besan)
Salt to taste
¼ teaspoon turmeric powder
½ teaspoon red chilli powder
2 tablespoons roasted and crushed peanuts
1 inch ginger
1 green chilli
5-6 garlic cloves
½ tablespoon oil + for greasing
1 teaspoon mustard seeds
¼ teaspoon asafoetida (hing)
A pinch of baking soda
Garlic-chilli chutney for serving
Green chutney for serving

Method

1. Roughly chop coriander leaves and transfer in a bowl. Add gram flour, salt, turmeric powder, chilli powder and peanuts and mix well.
2. Add sufficient water and mix well into a thick batter.
3. Roughly chop ginger and green chilli, transfer in a mortar. Add garlic and coarsely crush with a pestle.
4. Heat a waffle iron.
5. Heat oil in a non-stick tempering pan. Add mustard seeds and let them splutter. Add asafoetida and crushed ginger-chilli-garlic, mix and sauté for a minute.
6. Pour the tempering in the batter and mix well. Add some more water, if required, to adjust the consistency. Add baking soda and mix.
7. Grease the waffle maker with oil, pour the batter in it, cover and cook till crisp and golden from both the sides.
8. Cut into halves, garnish with coriander leaves and serve hot with garlic-chilli chutney and green chutney.
